Shaoxing Chicken 

(Drunken Chicken)

Ingredients 

4 Boneless chicken thighs (with skin preferred)

1/2 cup Goji berry

5-8 Jujube

1 tsp Salt

1 tsp Sugar

1 tsp Rice alcohol

200 ml Shaoxing wine

What You Need

Pot

Aluminum foil

Steps

  1. Lightly season the chicken thighs with salt and rice alcohol. 

  2. Roll the chicken thighs and wrap them individually with aluminum foil. This will shape the chicken thighs when steam cook. (you can skip this step if preferred)

  3. Place the wrapped chicken, goji berry, and jujube in a clean bowl. Fill a big pot with 1-inch of water and put the bowl with chicken in the pot.

  4. Steam the chicken over medium heat for 20 min, then turn off the heat to let it chill for another 10 min.

  5. Unwrap the chicken and keep the broth. Transfer chicken, broth, goji berry, and jujube into a clean container. Add Shaoxing wine and sugar to the container, and let it marinate overnight. It’s ready to serve!
